Tahini goes with every dish

Many dishes are not complete without a touch of tahini sauce. Tahini is a staple in kitchens around the world: its roots are in the cuisines of the Middle East and the Mediterranean, and it is also used in many Asian dishes and in Greek food.

Use it as a spread, as a dip, or as a sauce for salads and all kinds of dishes.

How to make tahini sauce

Ingredients

  • 1 cup raw tahini
  • About ½ cup cold water
  • ¼ cup lemon juice
  • 1 crushed garlic clove (optional)
  • ½ teaspoon salt
  • 1 to 2 tablespoons olive oil (optional)
  • A pinch of cumin (optional)

Method

  1. Put the tahini in a bowl and add the lemon juice and salt.
  2. Mix well. The tahini will thicken at first.
  3. Add the cold water gradually, stirring all the time.
  4. Keep adding water until you reach the texture you want: creamy, smooth and easy to pour.
  5. Add garlic and cumin to taste.
  6. Leave the sauce for a few minutes, then stir again before serving.

Tip: For salads, make the sauce lighter by adding a little more water. For hummus, falafel and sandwiches, a thicker sauce is better.
